Editor's note:  I just have to share my Mom's meatloaf recipe with you.   After this, any other meatloaf is just not a consideration.  Try it once, and you will fix it the rest of your days.  I don't think meatloaf taste right unless you have it with mashed potatoes and sweet peas!

Meatloaf

Preheat oven to 325 degrees

Grease meatloaf pans (butter will work)

You will definitely want to make more than one pan!

1 pound ground chuck

Mix in one egg
Mix in 1 chopped onion
Mix in 1 chopped bell pepper
Mix in ½ cut Quaker five-minute oatmeal
Mix in 2 Tbsp catsup
Mix in 1 eight ounce can tomato sauce
Mix in ½ tsp salt

Stir together really well and place into meatloaf pan. Squeeze plenty of catsup on top. Also, to keep edges from burning, rinse the tomato paste can with a couple of Tbsp water and drip tomato water around all four edges of the meatloaf. Bake 2 hours. It will sometimes take less time, so checking it at 1 ½ hours is not too early to take the first look.
