Editor's note:  When we have special company, this is the recipe my wife cooks.  It is unbelievably good.  Dynamite on the taste buds!!!  We are very picky about our wild Atlantic salmon and only buy the very best.

Oven-Baked Salmon

Pre-heat Oven to 400 Degrees

2  Wild Salmon Fillets (Food Lovers Market)

Mix together….
Melted butter, 1 or 2 Tablespoon approx. (to taste)
Bell’s Seasoning, ˝ teaspoon
Lime Juice, ˝ teaspoon or more (to taste)
Minced Garlic, ˝ teaspoon

Spread a small amount of mixture in flat baking dish and sprinkle both sides of fish lightly with salt. Place into baking dish. Spread the mixture over the top of the salmon as evenly as possible. Bake uncovered for approximately 18 minutes.

Editor's note:  This is a magical recipe.  So simple, but it will make you think your taste buds have gone to heaven.


Sweet Potato with Key Lime and Tequila

Cut skin off the sweet potato and wash clean.

Grate the sweet potato or use a potato peeler to make slices.

Place 2 tablespoons of butter in a Teflon skillet and melt with 2 tablespoons of brown sugar.
Add the juice of half a lime, if it becomes too tart, add more brown sugar.
Add half an ounce of tequila or to taste.

Sautee until soft, but still slightly crunchy (very slightly) and serve.
Takes total time of less than 20 minutes from preparation to cooking.
